Jack bean (Canavalia ensiformis L. DC) is a tropical and sub-tropical legume belonging to the family Fabaceae (Leguminosae). Originating in Central America and the Caribbean, it is now cultivated across Asia, Africa, and Latin America. The plant produces large, starchy white-to-cream seeds inside flat, sword-shaped pods. It is known by many regional names: feijão-de-porco (Brazil — meaning "pig bean," referring only to its use as animal fodder, not to any porcine origin or content), horse bean, and chicasanga. In food contexts, jack bean is consumed as a green vegetable (young pods), cooked dried seed, fermented product (notably as tempe koro or jack bean tempeh in Indonesia), seed flour, protein concentrate, and starch. Jack bean is exclusively plant-based. Its seeds, pods, leaves, and all commercially extracted constituents (urease, concanavalin A, lectins, protein isolates, flour, starch) originate from the Canavalia ensiformis plant.
