Pasteurized part-skimmed milk is cow's milk (or other permitted ruminant) from which a portion of the butterfat has been removed through centrifugal separation, then subjected to pasteurization — a controlled heat treatment (typically 72–75 °C for 15–20 seconds, HTST) that eliminates pathogenic bacteria without fundamentally altering the milk's composition.
